← Plan a route through Germany
Curated by Michele Edington, Certified Sommelier
Saxony is Germany’s small eastern wine secret, with steep Elbe terraces around Meissen, Radebeul, and Dresden. Production is tiny and mostly poured locally, which makes this a true “drink it there” region. Goldriesling is the local oddball to look for, because you are not going to see it on every wine list back home.
Grapes
white: Müller-Thurgau / Rivaner, Riesling, Weißburgunder / Pinot Blanc, Goldriesling, Grauburgunder / Pinot Gris, Traminer / Gewürztraminer, Kerner, Bacchus

Wines & pairings
Saxon dry white (Meissen/Radebeul)
Starters
- Smoked Elbe Fish — Weissburgunder brings crisp orchard fruit while Goldriesling adds lively citrus, creating a bright counterpoint to the rich smoke of fish from the Elbe River.
- Saxon Potato Soup — Silvaner's gentle herbal notes and fresh acidity weave through creamy potato soup, bringing a little lift to every spoonful.
- Quark with Fresh Herbs — Light-bodied Müller-Thurgau settles naturally beside creamy quark, allowing fresh herbs and spring onions to stay at the center of the plate.
Entrées
- Butter-Poached Zander — Weissburgunder carries enough texture for buttery freshwater fish, while its bright acidity keeps the finish lively and clean.
- Roast Pork with Sauerkraut — Silvaner's savory minerality slips comfortably alongside roasted pork, while bright acidity refreshes each bite of tangy sauerkraut.
- Saxon Sauerbraten — Goldriesling's citrus freshness and delicate fruit bring balance to the sweet-and-sour character that makes this regional classic so memorable.
Desserts
- Eierschecke (Off-Dry Goldriesling) — Goldriesling's orchard fruit echoes the creamy cheesecake filling, while a touch of sweetness lets the wine finish alongside the dessert.
- Apple Streusel Cake (Off-Dry Müller-Thurgau) — Fresh apple, warm spice, and buttery streusel feel perfectly at home beside a gently off-dry Müller-Thurgau with bright orchard fruit.
- Poached Pear with Vanilla (Late Harvest Goldriesling) — Honeyed fruit and soft floral notes drift naturally into ripe pear and vanilla, creating a pairing that feels graceful from first bite to last.
